Easy to make ketchup, no more industrial ketchup

Ingredients:

  • 1 kg fresh tomatoes, peeled and seeded
  • 1 onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1 tablespoon brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon five-spice powder
  • 1/4 cup apple cider vinegar
  • 1/4 cup red wine vinegar

Preparation :

  1. In a large saucepan, fry the onion and garlic in a little oil until soft.
  2. Add the tomatoes, sugar, salt, pepper and spices and bring to the boil.
  3. Reduce the heat and simmer for around 30 minutes, or until the tomatoes are tender and the sauce has thickened.
  4. Add the vinegars and simmer for a further 10 minutes.
  5. Remove from the heat and blend in a blender or food processor until smooth.
  6. Transfer the ketchup to sterilised jars and seal tightly.
  7. Allow to cool before storing in a cool, dark place.

You can adjust the ingredients to suit your personal taste, using less sugar or vinegar if you wish. This homemade ketchup is fresher, tastier and more balanced than the kind you can buy in the shops. You can use it to accompany your favourite dishes, or to make sauces or marinades.
