Traditional Valencian paella
Ingredients for 8 to 10 people :
- 1 kg bomba rice
- 1 chicken, cut into pieces
- 1 rabbit, cut into pieces
- 1 onion, chopped
- 3 cloves garlic, chopped
- 1 red pepper, diced
- 1 green pepper, diced
- 1 tomato, peeled and diced
- 2 tablespoons olive oil
- 1 tablespoon paprika
- 1 tablespoon saffron
- 800ml chicken stock
- Salt and pepper to taste
- 1 cup peas
- 1 cup chopped asparagus
Preparation :
- Heat the olive oil in a large paella pan over a medium heat and fry the chicken and rabbit pieces until golden brown. Set aside.
- In the same pan, fry the onion, garlic, peppers and tomatoes until tender. Add the paprika and saffron and mix well.
- Add the rice and stir to coat the grains. Add the chicken stock, peas, asparagus and reserved chicken and rabbit pieces.
- Simmer for about 20 minutes or until the rice is cooked and the water has been absorbed. Season with salt and pepper.
- Remove from the heat and leave to stand for a few minutes before serving.
