Vegetarian lasagne like a chef

Ingredients:

  • 12 lasagne sheets
  • 500g fresh or frozen spinach
  • 500g ricotta cheese
  • 2 onions, chopped
  • 4 garlic cloves, chopped
  • 500ml tomato coulis
  • 250ml milk
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Preparation :

  1. Preheat the oven to 180°C.
  2. In a large frying pan, sauté the onions and garlic in a little olive oil until soft. Add the spinach and cook until just melted. Season with salt and pepper.
  3. In a bowl, mix the ricotta, milk, some of the grated Parmesan and season with salt and pepper.
  4. In a gratin dish, spread a thin layer of tomato coulis over the base. Arrange a layer of lasagne sheets, then a layer of spinach, a layer of ricotta, and repeat this operation, finishing with a layer of tomato coulis. Sprinkle the remaining grated Parmesan over the top.
  5. Cover the dish with aluminium foil and bake for 25 minutes. Remove the foil and grill for a further 10 minutes, until the top is golden brown and crispy.
  6. Leave to stand for a few minutes before serving.
