An easy strawberry cheesecake

Ingredients for 8 to 10 people :

  • 200 g speculoos biscuits
  • 75 g melted butter
  • 450 g cream cheese (Philadelphia type)
  • 220 g sugar
  • 3 eggs
  • 2 tablespoons lemon juice
  • 1 tablespoon vanilla extract
  • 250 g strawberries, cut into small pieces
  • 100 g strawberry coulis

Preparation :

  1. Preheat the oven to 160°C.
  2. In a bowl, crush the speculoos biscuits into a fine powder and mix with the melted butter.
  3. Spread the biscuit mixture over the base of a buttered cheesecake tin.
  4. Place in the oven for around 10 minutes until golden.
  5. In another bowl, beat the cream cheese with the sugar until creamy.
  6. Add the eggs one at a time, mixing well between each addition.
  7. Add the lemon juice and vanilla extract and mix.
  8. Gently fold the chopped strawberries into the mixture.
  9. Pour the mixture over the biscuit base.
  10. Bake for around 45 minutes until the cheesecake is firm to the touch.
  11. Leave to cool completely before removing from the mould.
  12. Pour the strawberry coulis over the top of the cheesecake before serving.
